This non-profit organization, As Our Own, is one I hold close to my heart. They strive to protect beautiful, innocent children of India from being sex slaves or beggars and from a life of poverty and illness. Most of these children are stolen from their families to be sold into the red-light district of India, all for a profit, which is something that I cannot fathom.
Easy Healthy Hiking or Picnic Lunch
Hey there everyone! Hope you are doing well and enjoying life. Josh and I recently took a weekend trip for our 2 year anniversary up North. We decided to do some hiking on the Channel Islands. Most of the Islands are uninhabited meaning only a pit toilet, visitor center, and a ranger house there. So basically I needed to make sure we packed enough food for our day of hiking. I wanted something healthy and easy to shove into a backpack. Here’s what I came up with: Avocado Black Bean Salad (recipe below), pita pockets, carrots, apples, banana bread, and Nutella to go for dessert. Everything was easy to pack and didn’t need to be kept super cold. I made everything the day before, laid it on ice for our trip up and carried it on the boat to the Channel Islands. For the salad I kept it right next to my hydration pack to keep it cool with the water. I also packed a few plastic forks and napkins to have with us. We definitely had the best looking food out of any one else on the island.
